Teriyaki Lime Glazed Cornish Hens
1/3 cup lime juice (about 3 limes)
1/4 cup teriyaki sauce
2 tbsps vegetable oil
2 tbsps honey, divided
1 tsp black pepper
1 tsp grated fresh ginger
1 tsp dark sesame oil
1 tsp salt
4 Rock Cornish game hens about 1/5 lbs. each
Hot cooked herb-flavored rice
Preheat your oven to 350 degrees, and grease a large, shallow roasting pan.
Combine the lime juice, teriyaki sauce, vegetable oil, 1 tbsps honey, pepper, ginger and sesame oil in a small bowl and stir well. Sprinkle 1/4 tsp of salt in the cavity of each Cornish hen, and then place the hens in your prepared roasting pan. Brush the hens with the lime mixture.
Roast for 30 minutes, brushing occasionally with lime mixture. Stir remaining 1 tbsp of honey into the lime mixture. Roast 30 minutes more or until cooked through (165 degrees), brushing occasionally with lime-honey mixture. Tent with foil, and let stand for 15 minutes before serving. Serve with or over rice. This will make four servings and should take about 15 minutes to prepare and will cook 45-60 minutes.
